The following results were obtained. (1) 43% of solid matter in Konbu exuded into water during 20 min immersion, followed the rate was 36% for Wakame and 24% for Arame. (2) The rate of protein exudation was 20―25% for Arame, Ogo-nori, Hijiki and Hitoegusa, but the rate was only 10.8% for Wakame. (3) Exudation rate of calcium was 18% for Wakame, 8% for Konbu, 5% for Arame and Hijiki. (4) Exudation rate of iron was more than 50% for Arame and Ogo-nori, 19% for Wakame, 12% for Hitoegusa, 2―5% for Konbu and Hijiki.
