The obtained results were as follows: (1) Moisture of the walnut removed tannins by NaOH and KOH were higher than by NaHCO_3 and Na_2CO_3. (2) The whiteness of all walnut paste samples except one of the paste detannined by Na_2CO_3 decrease according to the storage days. (3) The whiteness-decrease of the walnut pastes according to the storage days were higher in KOH and in NaHCO_3 than in other solutions.
