College","bibliographic_titleLang":"en"}]}]},"item_7_description_19":{"attribute_name":"フォーマット","attribute_value_mlt":[{"subitem_description":"application/pdf","subitem_description_type":"Other"}]},"item_7_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"消費者の味への要求は近年ますます高まっており、基本5原味だけでは表すことのできない「コク味」が重要視されている。「コク味」はカルシウム受容体のシグナルから得られるとされていることから、カルシウム受容体のアゴニストを検討することで新たな調味素材が創出できると考えられる。「コク味」を有する化合物はこれまでいくつか報告されているが、全てカルボキシル基を含んでいる。そこで今回は官能基にカルボキシル基を有するカルボン酸について、強いコク味を有するc-Glu-Val-Glyを基準に、計算化学を用い模擬的に計算したカルシウム受容体への結合性について検討した。\n
