In application of the oxygen absorber, “Kori-tofu” was preserved in an airtight film bag with one or two pieces of the oxygen absorber (oxygen-free). The results obtained were as follows; (1) In the case of control, acid value (AV), peroxide value (PV), and carbonyl value (CV) of total lipids extracted from “Kori-tofu increased at each stored temperature.
