Eleven households to run agriculture who lived in the area for more than forty years were interviewed in December, 2001. In Minamihotaka, rice cultivation and sericulture used to be the main occupations. After World War II, the main occupation turned into only rice cultivation. In the later half of the 1960s, the number of part-time farmers had begun to rise and the cash income from a company work increased. They who were previously self-sufficient in their eating habits began eating purchased rather than homegrown foods. On the other hand, the production of vegetables for private use was continued because it was considered “a pleasure” and “a safty.”}, pages = {37--49}, title = {長野県安曇野市豊科南穂高における食文化の変化--昭和16年(1941)と平成13年(2001)の聞き取り調査の比較から}, volume = {65}, year = {2010}, yomi = {ナカザワ, ヒロコ} }
